Slow Cooker Chicken Tater Tot Casserole

This Slow Cooker Chicken Tater Tot Casserole is a quick and delicious crowd pleasing dinner everyone loves. Even the picky eaters will ask for seconds.

One of the reasons I love this slow cooker chicken tater tot casserole is it is one of the fastest Crock Pot recipes I’ve ever used. Unlike some other slow cooker recipes that cook overnight or take eight or 10 hours, this casserole is done in four hours.

As far as the ingredients, they are yummy beyond expectations, with chicken, scallions, bacon and cheese slow cooking in a creamy sauce. Then you top it with tater tots, plus more cheese and bacon. When my girls were little this was one of their favorites along with this Chicken Pot Pie Casserole recipe. I love both because I can use chicken leftover from other meals to make them.

Step-by-Step Instructions

I made this recipe using the 6-quart programmable Crock Pot that I’ve had for years.

In a large mixing bowl combine the chicken, cream of chicken soup, sour cream, ranch seasoning, half of the cooked chopped bacon, 1 cup of shredded colby jack cheese and ¼ cup of the scallions.

Stir together and place into your slow cooker and spread out.

Top the whole thing with the frozen tater tots, you may not need them all. I like to arrange them in a circle.

Top with the remaining cheese, bacon and scallions.

Cover and cook on low for 6 hours or high for 4 hours.

Notes

You could easily transform this from a dinner entree into a breakfast casserole. Just skip the chopped chicken and the cream of chicken soup. Instead, mix the remaining ingredients, save for the tater tots, as described. Then top with the tater tots, more cheese and bacon. I’ll bet this would bake up beautifully for that first meal of the day or to bring to a brunch potluck.

  • 1 ounce ranch seasoning
  • 12 pieces bacon, crumbled
  • 2 cups colby jack cheese, shredded

Instructions

  2. I cooked the bacon ahead of time in my air fryer. So it shouldn’t affect it too much. And if I didn’t put that in the recipe, I’ll go fix that now. Thanks for the comment.
