  • 2 lbs pork shoulder
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp dried rosemary
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp ground fennel seeds
  • 2 tsp cocoa powder
  • sea salt and black pepper to taste
  • 1/3 cup organic sugar-free chicken broth
  • 8 iceberg or butter lettuce leaves

Step-by-Step Instructions

To start, combine all the spices and cocoa in a small bowl and season with salt and black pepper. Rub this flavorful mix all over the pork shoulder, then transfer it to your slow cooker. Add the chicken broth, then let your slow cooker do its magic.

After four to six hours (depending on your slow cooker setting), use two forks to pull the pork apart. Let the pulled pork sit in its juices for another 20-30 minutes with the slow cooker set to “warm.” This step allows the pork to absorb even more flavor.

When you’re ready to serve, simply fill each lettuce leaf with your favorite slaw, then top with the pulled pork.

Notes

We’ve eaten these using romaine lettuce, too. Basically, whatever you have in your produce drawer should work as a lettuce wrap.

Also, don’t have a slow cooker? No worries. You can always use your Instant Pot on the slow cooking setting to achieve the same results as using a Crock Pot slow cooker.
