Pumpkin Spice Whoopie Treats is the perfect dessert to bring a little cozy joy to your kitchen, especially as the weather starts to cool. These soft, spiced pumpkin cookies filled with creamy frosting are simply irresistible. The balance between the spiced pumpkin flavor and the sweet, creamy filling is what makes this treat everyone’s favorite.

Ingredients
  

For the cookies:

  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup oil
  • 3 cups pumpkin puree not pumpkin pie filling
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons pumpkin pie spice

For the frosting filling:

  • ½ cup unsalted butter softened
  • 8 oz cream cheese softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla

Instructions
 

  • Start by heating your oven to 350°F. Line a couple of baking sheets with parchment paper and set them aside.
  • In the bowl of a stand mixer, combine the sugar, brown sugar, and oil. Mix until everything is combined.
  • Stir in the pumpkin puree, eggs, and vanilla. Mix it all together until smooth.
  • Add in the flour, salt, baking soda, baking powder, and pumpkin pie spice. Mix just until the dough comes together, don’t overdo it, or the cookies might turn out too dense.
  • Using an ice cream scoop, place dollops of the dough onto the prepared baking sheets. Make sure there’s space between them so they don’t spread into each other.
  • Bake in the preheated oven for 10-12 minutes, or until the centers of the cookies are set. Let them cool completely before assembling the whoopie pies.
  • In the bowl of a stand mixer, beat the butter until it’s smooth. Add the softened cream cheese and mix until everything is blended. Stir in the powdered sugar and vanilla, and mix at medium speed until the frosting is smooth and fluffy.
  • Once the cookies are cool, pair them up in similar sizes. Transfer the frosting to a piping bag and pipe a mound of frosting onto one half of each cookie. Top with the other half to create your whoopie pie sandwich.
