Honey Bun Recipe with Yellow Cake Mix

When it comes to holiday cakes, a honey bun one is right up there. I've been to both Thanksgiving and Christmas dinners where this was one of the desserts offered. Once I tried it, I was hooked. And once I made it? I couldn't believe how easy it was.

Ingredients
  

  • 15 ounces yellow cake mix
  • 4 eggs
  • 2/3 cup vegetable oil
  • 8 ounces sour cream
  • 3/4 cup brown sugar
  • 2 teaspoon cinnamon
  • 1 1/2 cup powdered sugar
  • 2 teaspoon vanilla extract
  • 1 teaspoon milk

Instructions
 

  • Spray a 9x13 baking dish with nonstick cooking spray and set aside.
  • Preheat the oven to 350 F.
  • Add the cake mix, eggs, vegetable oil and sour cream to a large mixing bowl, mix with a hand mixer or immersion blender until everything is mixed together.
  • Scrape around the edges of the bowl to make sure everything is mixed together well and no cake mix remains on the sides. The batter will be a creamy yellow color.
  • Pour half of the batter into the baking dish and spread around.
  • To make the middle layer of cake, mix brown sugar and cinnamon in a second mixing bowl.
  • Sprinkle cinnamon sugar mixture all over batter that's already in the baking pan. Make sure you cover it completely.
  • Pour the rest of the batter over the cinnamon sugar layer and spread with a knife or spoon.
  • Bake for 30-35 minutes or until it is no longer jiggly in the center and sticking a toothpick in the middle comes clean.
  • Let cool completely for 30-45 minutes.
  • Once it’s almost cool, it's time to prepare the icing. In a medium bowl add the powdered sugar, vanilla and milk and stir until an icing forms.
  • Pour all over top of the cake and spread around.
  • Let cool for 25 minutes and let the icing harden up a bit. Slice and serve!

Notes

When preparing the icing, if it’s too thick add more milk. If it's too watery, add more powdered sugar.
To get the icing to harden up a bit fast, you can place the cooked cake it in the fridge.
