Honey Bun Recipe with Yellow Cake Mix

I’m really loving learning how you can use boxed cake mix to make other kinds of desserts, just as I did with the recipe for banana bread. Now I’m excited to share with you this recipe for a honey bun cake that uses yellow cake mix.

When it comes to holiday cakes, a honey bun one is right up there. I’ve been to both Thanksgiving and Christmas dinners where this was one of the desserts offered. Normally, I’ll go for anything chocolate but once I tasted this delight, I was hooked.

Also, this should not be confused with a Passover Honey Cake. Yes, both have the word honey in the title but today’s recipe doesn’t actually use any. It just tastes like it does. The Passover cake? Yup, dark honey is required.

Ingredients Overview

Step-by-Step Instructions

Spray a 9×13 glass baking dish with nonstick cooking spray and set aside. At the same time, preheat the oven to 350 F.

Add the cake mix, eggs, vegetable oil and sour cream to a large mixing bowl. Mix with a hand mixer or immersion blender until blended.

Scrape around the edges of the bowl to make sure everything is mixed together well and no cake mix remains on the sides. The batter will be a creamy yellow color.

Pour half of the batter into the baking dish and spread around.

Now we’re going to make the middle layer of cake with the brown sugar and cinnamon, which you’ll mix together in a second mixing bowl. You can use a fork or a spoon to mix.

Sprinkle cinnamon sugar mixture all over batter that’s already in the baking pan. Make sure you cover it completely.

Pour the rest of the batter over the cinnamon sugar layer and spread with a knife or spoon.

Bake for 30-35 minutes or until it is no longer jiggly in the center and sticking a toothpick in the middle comes clean. Let cool completely for 30-45 minutes. Once it’s almost cool, it’s time to prepare the icing. In a medium bowl add the powdered sugar, vanilla and milk and stir until an icing forms. If it’s too thick add more milk. If it’s too watery, add more powdered sugar.

Pour all over top of the cake and spread around.

Let cool for 25 minutes and let the icing harden up a bit. You can place it in the fridge for a shorter time frame. Slice and serve!

Ingredients
  

  • 15 ounces yellow cake mix
  • 4 eggs
  • 2/3 cup vegetable oil
  • 8 ounces sour cream
  • 3/4 cup brown sugar
  • 2 teaspoon cinnamon
  • 1 1/2 cup powdered sugar
  • 2 teaspoon vanilla extract
  • 1 teaspoon milk

Instructions

  • Let cool for 25 minutes and let the icing harden up a bit. Slice and serve!

Notes

When preparing the icing, if it’s too thick add more milk. If it’s too watery, add more powdered sugar.
To get the icing to harden up a bit fast, you can place the cooked cake it in the fridge.
