Easy Gremolata Recipe

Gremolata is an easy, Italian parsley-based recipe for a condiment that gives a fresh pop of flavor to almost any dish. It is often served as a garnish or side with fish and meat. It reminiscent of middle eastern tabouleh but without the grains. Here's a simple way to make it.

  • 1 cup Italian parsley
  • 2 teaspoons garlic About 2 cloves, minced or grated.
  • Zest of one lemon
  • Juice of half a lemon (optional)

Instructions
 

  • Chop the the parsley.
  • Grate the zest of one lemon onto the parsley.
  • Mince or grate the garlic and add to the parsley.
  • If you wish a bit of extra citrus flavor, squeeze half of the lemon that you zested onto the parsley.
  • Mix throughly.

Notes

molata lasts for several days in an airtight container in the fridge so be sure to make a bunch and use it for the week.
I'll often substitute it for parsley in any Italian meal that calls for parsley or I'll add it to dinners we're already making. For instance, it works great with shrimp scampi with linguine.
Gremolata is a versatile condiment. Use it like you would relish on a hot dog or sausage. It also goes great with tomato on a burger. For finer dining, serve a small quantity as a tasty garnish for meat or fish.
With pasta or risotto, it can be served as you would pesto. With pasta, you may wish to add some olive oil to the mix.
