Gremolata has just three ingredients:

  • parsley
  • garlic
  • lemon

Besides boiling pasta, it is one of the easiest Italian recipes that you can make. This is not only because it has so few ingredients but also because it involves no cooking. That means you can spruce up any dish in a jiffy just by throwing together this easy gremolata recipe.

FYI, gremolata is hardly the only green sauce in Italian cooking. There’s also salsa verde, like in Mexican cooking. However, for Italian dishes you’ll use basil and parsley plus capers, mustard and anchovies. On the other hand, there is pesto, another green Italian sauce, made with basil, pine nuts, olive oil and cheese.

Start by chopping the parsley.

Mince the two cloves of garlic.

Add the garlic to the chopped parsley.

Use a spoon to mix.

Next, zest the lemon over the mixed parsley and garlic.

Squeeze half of the lemon you zested on top of the gremolata and mix again with a spoon.

Notes on making this easy gremolata recipe

Gremolata lasts for several days in an airtight container in the fridge so be sure to make a bunch and use it for the week.

I’ll often substitute it for parsley in any Italian meal that calls for parsley or I’ll add it to dinners we’re already making. For instance, it works great with shrimp scampi with linguine.

  • Grate the zest of one lemon onto the parsley.
  • Mince or grate the garlic and add to the parsley.
  • If you wish a bit of extra citrus flavor, squeeze half of the lemon that you zested onto the parsley.
