Broiled Prime Rib Steaks with Mushrooms and Asparagus is the perfect choice when you’re craving a comforting yet special dinner. These steaks, broiled to perfection and topped with sautéed mushrooms and fresh thyme, are paired with roasted asparagus for a full, satisfying meal that only takes about 20 minutes from start to finish.

Ingredients
  

  • 2 - 16 oz prime rib steaks room temperature
  • 1 cup chopped bella mushrooms
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 4 fresh thyme sprigs
  • 1 bundle asparagus
  • Butter to serve
  • parsley fresh; to serve

Instructions
 

  • Preheat the oven to broil. Drizzle olive oil into a large cast-iron skillet and place it in the oven to warm while the oven heats up.
  • Trim the asparagus ends and spread the stalks on a parchment-lined baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Set aside.
  • Combine salt, pepper, and garlic powder in a small bowl. Rub this seasoning mixture over both sides of the steaks.
  • Remove the hot skillet from the oven and place the steaks in it. Top with chopped mushrooms. Return skillet to oven along with the asparagus and broil for 5 minutes.
  • Flip the steaks after 5 minutes and add thyme sprigs. Return to the oven and broil for another 5 minutes.
  • Use a meat thermometer to check the steaks. If necessary, continue broiling for an additional 2 minutes at a time, flipping each time.
  • Remove the steaks from the oven and let them rest for about 10 minutes.
  • Top with butter, serve with mushrooms and asparagus, and garnish with parsley. Enjoy!
