How to Make Broiled Prime Rib Steaks with Mushrooms and Asparagus

Preheat and prepare the oven

Preheat your oven to broil. Drizzle the olive oil into a large cast-iron skillet and place it in the oven to warm as the oven heats up. This ensures the skillet is sizzling hot when the steaks hit it, giving them a perfect sear.

Prep the asparagus

While the oven is heating, prep the asparagus. Trim the woody ends of the asparagus and spread the stalks evenly across a baking sheet lined with parchment or foil. Drizzle with olive oil, then sprinkle a pinch of salt, pepper, and garlic powder over the asparagus. Set it aside for later.

Prep and season asparagus on sheet.

Season the steaks

In a small bowl, combine the salt, pepper, and garlic powder. Rub the seasoning mixture generously over both sides of the steaks, making sure they’re evenly coated.

Sear the steaks

Once the oven is preheated, carefully remove the hot skillet from the oven. Immediately place the seasoned steaks in the skillet. Be cautious as the pan will sizzle and splatter. Top each steak with the chopped mushrooms. Then, return the skillet to the oven, along with the baking sheet of asparagus. Broil the steaks for 5 minutes.

Flip the steaks and add thyme

After 5 minutes, remove the skillet from the oven and flip the steaks. Add the fresh thyme sprigs on top of the steaks. Return everything to the oven and broil for an additional 5 minutes.

Flip steaks, add thyme, broil 5 min more.

Check the steak’s doneness

After 10 minutes of broiling, remove the skillet from the oven. Use a meat thermometer to check the steaks for doneness. Cook them for an additional 2 minutes if you prefer them more well done, flipping the steaks each time. The asparagus should be done when the ends are slightly crispy, and the stalks are tender.

Let the steaks rest and serve!

Remove the steaks from the skillet and let them rest on a cutting board or plate for about 10 minutes. This resting time allows the juices to redistribute, ensuring a juicy and tender steak. Top the steaks with pads of butter and serve with the sautéed mushrooms and roasted asparagus. Garnish with fresh parsley for a pop of color. If you don’t want to eat the thyme sprigs, feel free to remove them before serving.

Add butter, serve with mushrooms, asparagus, and parsley.

Serving Suggestions

These Broiled Prime Rib Steaks with Mushrooms and Asparagus are perfect on their own, but you can make the meal even more special by serving them with a side of mashed potatoes, roasted garlic bread, or a fresh salad. You might want to try Easy Cold Pasta Salad, it’s quick to make and adds a bright, refreshing side to your dinner.

The steaks pair beautifully with a glass of red wine, especially something bold like a Cabernet Sauvignon or a Malbec. For an extra indulgent touch, add a dollop of sour cream on the side or a drizzle of balsamic glaze over the asparagus.

Storage Tips

If you have any leftovers (which I doubt, because these steaks are hard to resist!), store them in an airtight container in the fridge for up to 2 days. Reheat the steaks gently in the oven or on the stovetop to avoid overcooking them.

The asparagus will keep well for a day or two as well, but it’s best enjoyed fresh. If you want to freeze the steaks, wrap them tightly in plastic wrap and foil before freezing for up to 2 months.
