Some benefits of using no-rise pizza dough include saving time, as there’s no need to wait for the dough to rise. Plus, you may end up achieving a thinner, crisper crust.

Additionally, we love this option for impromptu pizza-making. There’s no prep time and you’ll end up getting your pizza in the over more quickly than traditional dough. That’s ideal for when you want to set up a pizza toppings bar or break out your Ooni pizza oven.

This type of dough also tends to be easier to work with. So, if you’re new to making pizza at home, I hope this recipe feels less intimidating than other so-called fancy pizza dough recipes.

If your dough is dry, mound it, make an indented well in the middle and add water — one quarter cup at a time, until you get a workable dough. If you over water, add some flour.

Knead the dough. Don’t want to do it by hand? You can also use a mixer with a dough hook, like the one on my Ankarsrum mixer.

Cheese to Use with Your Pizza

You can use any mozzarella cheese, but fresher is better, either shredded or thin sliced. The pre-shredded cheese in grocery stores is convenient, but contains a bunch of anti-caking and anti-mold ingredients that distract from the flavor. So, if you have the time and money, go with the fresh stuff.

Also, have some fun with cheese selections. Lately, we’ve been playing around with white cheese pizza using ricotta as the base instead of a sauce. Then, we’ll add in three or four different cheeses, such as mozzarella, provolone, parmesan and gorgonzola or feta.

Other Pizza Doughs

If you are looking for a slightly richer crust, take the time to try our sourdough pizza dough recipe. It takes time to rise, but adds a depth of flavor.

You can use any tomato sauce, like our marinara or meat sauces, but try our Goat Cheese Pizza Sauce. It is my favorite and complements hearty toppings, like pepperoni and onions, well.

Or, if you want to have dough that you can just leave to its own devices, there is always breadmaker pizza dough.

Storing Your Pizza Dough

You can freeze your dough in an airtight container for several months. This dough also stays fresh in the refrigerator overnight. Since it does contain yeast, it will rise a bit if you leave it overnight.
