Spicy Peach Salsa

When my favorite brand of store-bought salsa stopped making the peach flavor, I had to learn to make my own. Thus this recipe for peach jalapeno salsa. Honestly, it tastes better than the jarred kind and it is now my go-to for serving with fish or even just chips.
One of the reasons I love this salsa recipe is that it doesn't include any tomatoes. Of course, you can add them if you have them but I tend to prefer sweet salsas made with fruit rather than savory ones made with tomatoes. That's just my preference.

Ingredients
  

  • 6 peaches pits removed and cut into small pieces
  • 3 tablespoons fresh lime juice
  • 1 shallot medium sized and minced
  • 3 tablespoons red onion cut into small, thin slices
  • 2 teaspoons jalapeno peppers seeds and veins removed, very finely minced
  • 3 tablespoon cilantro fresh and finely chopped
  • Sea salt and black pepper to taste

Instructions
 

  • Combine all ingredients* in a large glass or another non-reactive bowl. Season with salt and black pepper, to taste and stir to combine. *Tip: Start with a very small amount of jalapeno pepper and taste before adding more.
  • Cover with plastic wrap and store in the refrigerator overnight or immediately with chips or fish you've cooked. Enjoy!

Notes

Important safety tip when working with fresh jalapeno peppers: always wear food grade gloves. If the juice from the peppers gets on your skin and then you touch your eyes or other sensitive parts of the body, it will burn like a proverbial mother you-know-what.
As you know this fruit-based salsa relies on fresh peaches. However, sometimes I'll add other fruit that I have on hand. This might include watermelon or strawberries.
