Slow Cooker Honey Garlic Chicken

  • 2 pounds chicken breasts skinless boneless
  • 1 cup soy sauce reduced sodium
  • 1/2 cup honey
  • 1/4 cup hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 8 cloves garlic
  • 2 scallions
  • 1/4 teaspooon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Take the whole garlic cloves and grate them.
  • Add all of the ingredients to the slow cooker. Stir until well combined.
  • Cook in the slow cooker for 3-4 hours on high or 6-7 hours on low. Make sure to flip the chicken breast over when cooked halfway.
  • Once fully cooked, shred the chicken. You can use two forks to shred.
  • Serve with rice and top with scallions and sesame seeds.

Notes

To make things easier, I'll cook the rice in the Instant Pot.
Years ago, I used to make a chicken stir fry in the Crock Pot. I've got to find that old recipe and get it on this blog for all of you to try. Anyway, with this Slow Cooker Honey Garlic Chicken, you can make it a quasi stir fry by adding mixed frozen vegetables.
Sometimes chicken breasts dry out when cooked for too long in the Crock Pot. So you can always substitute chicken thighs for the breasts in this recipe.
