Rocky Road Pie

This No Bake Rocky Road Pie is so easy and so delicious it will be your go to all summer long! A graham cracker crust is piled high with a luscious chocolate cream pie filling studded with mini marshmallows, chocolate chips and toasted almonds. Tastes just like that classic ice cream favorite!

  • 1 1/2 cups graham cracker crumbs
  • 1 tablespoon sugar
  • 6 tablespoons butter
  • 1 1/2 cups half and half cream
  • 1 envelope instant chocolate pudding mix 3.9 ounce
  • 1 container whipped topping 8 ounce
  • 1/2 cup miniature marshmallows
  • 1/2 cup chopped roasted almonds

Directions

  • In a large bowl add the graham crumbs and sugar.
  • Melt the butter and stir into the crumb mixture.
  • Press the crust mixture into a 9 inch pie pan.
  • In a large bowl, whisk together the half and half and pudding mix for 2 minutes until well combined and slightly thickened.
  • Fold in the whipped topping, chocolate chips, marshmallows and almonds.
  • Pour the pie filling into the pie crust.
  • Place in the freezer for 6 hours until frozen.
  • For garnish you can drizzle with melted chocolate chips and sprinkle with more marshmallows, almonds and chocolate chips.
  • Slice and serve!

Notes

You can make this pie up to three months in advance and then keep it in the freezer. Doing so gives you a last-minute dessert option for any potlucks or picnics you get invited to in the future.
Don't want to make the crust from scratch? No problem. A store-bought one will work just as well. Also, you can try a crust made from chocolate graham crackers, too.
