Roasted Potatoes in the Air Fryer

Previously, I would always make roasted potatoes on a sheet pan in the oven. However, once I discovered how well the air fryer cooks potatoes, I wanted to try it with every potato variety and cooking method possible — including roasting. I think you're going to love this version of roasted potatoes in the air fryer as much as I do.

Ingredients
  

  • 2 pounds small potatoes choose multi-colored waxy, cut into equal, bite-sized pieces
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons dried rosemary
  • 1/2 tablespoon garlic powder
  • Sea salt and black pepper to taste
  • Freshly shaved Parmesan cheese to serve
  • Sprigs of fresh rosemary for garnish

Instructions
 

  • Combine the potatoes, olive oil, dried rosemary and garlic powder in a large bowl. Add salt and black pepper, to taste, and toss to combine.
  • Add seasoned potatoes to the air fryer basket and spread them into an even layer without overcrowding. Insert into the air fryer
  • Choose the Air Frying cooking option and set the temperature for 400 F and cooking time for 18 minutes. Press Start.
  • Transfer potatoes to a serving bowl or platter and top with freshly grated Parmesan cheese, if desired. Garnish with sprigs of fresh rosemary and serve immediately. Enjoy!

Notes

Halfway through the cook time, you can turn the potatoes with a plastic spatula so they brown evenly, making sure they are still in a single, even layer. Close the lid and continue air frying until cook time is complete. However, this is an optional step.
Depending on the size of your air fryer basket, you may have to cook potatoes in multiple batches to avoid overcrowding.
