Peach Whiskey Barbecue Chicken

Enjoy this simple and refreshing one-pan dish. Sweet peaches perfectly complement savory whiskey-barbecue chicken. Use fresh peaches if you have them on hand. Otherwise substitute rinsed canned peaches.

Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons oil
  • 12 chicken drumsticks
  • 1 onion medium sized and diced
  • 1 1/2 cups whiskey OK to substitute bourbon
  • 3 cups barbecue sauce
  • 1/2 cup peach preserves
  • 4 peaches sliced

Instructions
 

  • Preheat the oven to 300 degrees F.
  • Meanwhile, on the stovetop, set it to medium heat. Add oil and butter to a large cast-iron skillet, and heat until butter is melted.
  • Add in the diced onion and saute for about 3-4 minutes.
  • Place chicken drumsticks in skillet, and brown for about 3 minutes. Using tongs, turn chicken over and cook for about 3 more minutes.
  • Remove the chicken from skillet.
  • Add whiskey to skillet, and simmer for about 4 minutes
  • Add barbecue sauce.
  • Then add 1/4 cup water and peach preserves. Stir until well combined.
  • Place browned chicken in skillet.
  • Top with peach slices.
  • Bake covered for 1 1/2 hours, then uncovered for 30 minutes, or until chicken is very tender.

Notes

This recipe pairs really well with green beans or seasoned cooked potato cubes. Or, you can serve it with a cold pasta salad or regular salad.
I used Open Pit honey BBQ sauce, but any kind will work. If you have barbecue sauce leftover from making BBQ wings in the air fryer, this recipe is the perfect time to use it up.
Make sure to use a very large cast iron skillet that will hold everything without spilling over the sides. I placed a cookie sheet on the bottom rack of my oven below the skillet to catch any drippings.
Finally, we topped this dish with Italian flat leaf parsley but that's completely optional. It makes the pictures look pretty and we like the flavor. But if you don't, then skip it altogether.
