Ingredients
  

For the Crust

  • 1 cup unsalted butter softened
  • ½ cup brown sugar
  • 2 cups all-purpose flour
  • For the Filling
  • 24 oz cream cheese softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract

For the Apples

  • 3 cups Granny Smith apples peeled and finely diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

For the Topping

  • ½ cup unsalted butter softened
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • ½ cup quick oats

For serving

  • Caramel sauce for drizzling

Instructions
 

  • Preheat your oven to 350°F. Line a 13x9-inch baking dish with parchment paper and set it aside.
  • In a mixing bowl, combine the flour, brown sugar, and softened butter. Mix until the dough is crumbly. Press the mixture firmly into the bottom of the prepared dish. Bake for about 15 minutes, until the edges just start to brown.
  • In a stand mixer or with a hand mixer, beat the cream cheese until smooth. Add the sugar and mix again, scraping down the sides of the bowl. Add the eggs one at a time along with the vanilla, mixing until the batter is creamy. Spread the filling evenly over the baked crust.
  • In a large bowl, stir together the diced apples, sugar, cinnamon, and nutmeg. Sprinkle the apple mixture evenly over the cheesecake filling.
  • In another bowl, mix the softened butter, brown sugar, flour, and oats until crumbly. Sprinkle the mixture over the apples in an even layer.
  • Place the pan in the oven and bake for 40 to 45 minutes. The cheesecake should be set but still have a slight jiggle in the center.
  • Let the pan cool completely at room temperature. Transfer to the fridge and chill for at least 4 hours before slicing.
  • Cut into squares, drizzle with caramel sauce, and serve chilled.
