Air Fryer Chicken Fajitas

If you've ever gone out for Mexican food and ordered fajitas, you can smell them on the way to your table before they even arrive. This recipe for air fryer chicken fajitas provides the same olfactory and taste buds experience. Plus, it's fast and easy for a busy night dinner.

Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons fajitas seasoning
  • 1 teaspoon salt
  • 3 bell peppers red, yellow and green to add color to your dish
  • 1 red onion
  • 2 tablespoons avocado oil

Instructions
 

  • Preheat your air fryer to 380°F (190°C) for about 3-5 minutes.
  • Slice the chicken breasts into thin strips.
  • Slice the yellow, green and red bell peppers.
  • Slice the red onion.
  • In a large bowl, combine the avocado oil, fajita seasoning and salt.
  • Add the chicken and vegetables. Toss until evenly coated.
  • Place the seasoned chicken and vegetables in the air fryer basket, spreading them out into a single layer.
  • Cook in the air fryer at 380°F (190°C) for 11 minutes.
  • After 11 minutes, carefully remove the basket and shake it or use tongs to turn the chicken and vegetables.
  • Return the basket to the air fryer and cook for an additional 11 minutes, or until the chicken is cooked through and the vegetables are tender and slightly charred.
  • Once cooked, remove the chicken fajitas from the air fryer and serve immediately with warm tortillas, salsa, guacamole, sour cream and any other desired toppings.

Notes

The nutritional information in this recipe does not include the tortillas you'll serve the fajitas in.
You can easily save time by buying precut vegetables and chicken. Also, you can get premade fajita seasoning at the store. And there's no need to marinate the chicken before cooking. The air fryer will take care of all of that while cooking.
Some other ways to tweak this recipe in your favor:
    • Add other vegetables to the fajitas. You can customize them with your favorite vegetables like mushrooms, zucchini or cherry tomatoes.
    • Substitute chicken thighs or another kind of protein.
    • Substitute plain Greek yogurt for sour cream. This will up the protein nutritional value of your meal.
    • Make ahead. While fajitas are best enjoyed when they are made fresh, you can prepare the seasoned chicken and vegetables ahead of time and store them in the refrigerator until ready to cook in the air fryer. If you have leftovers, you can reheat them in the air fryer the next day.
    • If you have a second air fryer, you can us it to warm the tortillas you'll be using for your fajitas. That is, set the air fryer to 350°F, put the tortillas in the basket in a single layer and heat for just 30 seconds.
