Two Ingredient Lemon Bars with Angel Food Cake Mix

A recipe that makes delicious lemon bars using only two ingredients? Sounds impossible, I know. But once you try it, you’ll believe that it is possible to make something this yummy with so few ingredients.

Two Ingredient Lemon Bars with Angel Food Cake Mix

So, what are the two ingredients in this recipe? One, lemon pie filling. And, two, a box of angel food cake mix. That’s it. You don’t have to add water or an egg or oil. Just mix, pour in the pan and, 30 minutes later, you have a baking dish filled with lemon bars.

This is such a great recipe to have on hand. It’s a homemade and easy dessert you can make and serve to last-minute guests or bring to a potluck.

Preheat the oven to 350 F. While the oven is heating up, spray a 9×13 baking dish with non-stick spray and or line it with parchment paper. You’ll see from the pictures here that I tend to use parchment paper.

In a large measuring cup or bowl, add the angel food cake mix and lemon pie filling. Use a spoon to gently mix together. You don’t want to overmix. Once combined, spread the batter out in the baking dish. Bake for 30 minutes.

Once done, set aside to cool. Once cool, sprinkle with powdered sugar if you’d like. Slice into 12 bars and serve.

Notes

Make sure your angel food cake mix only calls for water. It might say something like “ready to bake” or “simply mix” on the label. That is the kind you need to use even though you are not adding any water to the recipe.

Just like my strawberry cream cheese dump cake recipe, you can easily modify this recipe with other kinds of fruit pie filling. Your options are only limited by the kinds of canned pie filling you can find in the store. Some variations on this easy dessert recipe might use the following:

  • cherry pie filling
  • pumpkin puree
  • blueberry pie filling
  • apple pie filling

  • 16 ounces angel food cake mix equivalent to one box
  • 22 ounces lemon pie filling

Optional Ingredients

  • powdered sugar
  • whipped cream
  • mint
  • lemon for topping

Instructions
 

  • Preheat your oven to 350 F.
  • Spray a 9×13 baking dish with non-stick spray and or line with parchment paper.
  • In a large bowl using a spoon gently mix together the angel food cake mix and lemon pie filling.
  • Once combined spread the batter out into the pan.
  • Bake at 350 F for 30 minutes.
  • Set aside to cool.
  • Sprinkle with powdered sugar if you like.
  • Slice and serve!

Notes

  • Store leftovers in an airtight container for 3 days.
  • You can add lemon zest if you like. 
  • Make sure your angel food cake mix only calls for water, that is the kind you need to use. But do not add any water.
