When it comes to making comfort food, I tend to turn to this recipe for slow cooker pork chops with apples and stuffing. It has all the ingredients I want when I need a warm food hug from inside.

Once again, my slow cooker has come through for me when I want to make a dinner with multiple moving parts. With this recipe, you get a delicious blend of boneless pork chops with apples plus stuffing — something you might only enjoy at Thanksgiving. But there’s no reason you can’t add stuffing to an everyday dinner recipe for fall or another time of the year.
Also, this recipe is all about conveniences. Rather than peeling, coring and cutting the apples, you’re using canned apple pie filling. Plus, you aren’t making stuffing from scratch. Instead, this calls for a boxed recipe — so easy. Hey, I use the boxed version at Thanksgiving, too.

Season the pork chops with the onion powder, garlic powder, paprika and poultry seasoning.
Place the pork chops in the bottom of the slow cooker.
Next pour over the apple pie filling.
In a medium bowl combine the stuffing mix and chicken stock and stir to combine.
Pour the stuffing over the pork chops and apples. Dot the top of the stuffing with the butter.
Cover and cook on low for 4-6 hours until the pork chops are tender.
Notes
You can use any thickness pork chop you like. However, I would avoid thin pork chops. They will easily overcook and become tough.
If you don’t like the way the pork chops cook up, you can always brown them — not cook them through — in a skillet beforehand. I just don’t want to do this as it adds another step to the recipe and I want my Crock Pot dinners to be dump and go or set it and forget it.
You can use any flavor stuffing you prefer. I just happen to like cornbread stuffing.
This is fabulous with a side of cranberry sauce, if making around Thanksgiving time and you have leftovers. Or serve with a steamed veggie like I did — green beans.

- 21 ounces apple pie filling
- 6 ounces cornbread stuffing mix
- 12 ounces chicken stock
- 4 tablespoons butter
Instructions
- Season the pork chops with the onion powder, garlic powder, paprika and poultry seasoning.
- Place the pork chops in the bottom of the slow cooker.
- Next pour over the apple pie filling.
