How to make Cinnamon Bliss Poke Cake

Prepare the cake

Start by following the instructions on the box to prepare the yellow cake mix. Pour the batter into a greased 9×13-inch baking dish and bake it according to the directions on the box, usually around 30 minutes. Once the cake is done, let it cool for about 10 minutes.

Poke the cake

After the cake has cooled slightly, grab a wooden spoon handle (or a chopstick) and gently poke holes all over the cake. You want to make sure the holes go deep enough, but not all the way through, they’ll let the delicious cinnamon syrup soak in.

Make the cinnamon filling

In a microwave-safe bowl, combine the sweetened condensed milk, butter, brown sugar, cinnamon, and vanilla extract. Microwave on high for 1 minute, then stir. Continue microwaving in 30-second intervals, stirring in between, until the butter is melted and the sugar dissolves. Stir until smooth and well combined.

Microwave 1 minute, stir, then 30 seconds until smooth.

Pour the filling

Once your cinnamon mixture is ready, pour it evenly over the cake. The filling will soak into the holes, infusing every bite with cinnamon goodness. Let the cake sit for 15 minutes to allow the filling to fully absorb.

Make frosting, frost cake

In a large mixing bowl, beat together the softened butter and cream cheese with an electric mixer on medium speed. Once smooth, add the vanilla extract and heavy cream and mix until combined. Gradually add the powdered sugar, mixing until the frosting is fluffy and smooth. Once the cake has absorbed the cinnamon filling, scoop the cream cheese frosting on top and spread it evenly over the cake. If you want an extra touch, dust the top with a little cinnamon for some added flair.

Serving suggestions

This Cinnamon Bliss Poke Cake is delicious on its own, but it’s even better when paired with a scoop of vanilla ice cream or a dollop of whipped cream. If you’re looking for a more complete meal, serve it with Lemon Herb Roasted Chicken Thighs or a fresh salad. The cake is sweet enough to stand alone but balances perfectly with savory dishes.

For a cozy meal, serve it with Risotto Shrimp Scampi or a savory pasta bake. Both complement the rich cinnamon and cream cheese frosting.

Storage tips

If you happen to have leftovers (though it’s unlikely!), store them in an airtight container in the fridge.

This cake will keep for up to five days, so you can enjoy it over the next few days. To reheat, pop a slice in the microwave for 10-15 seconds, it’ll taste almost as good as when it was freshly baked!
