Rocky Road No Bake Pie

This Rocky Road Pie is a no-bake dessert that is so easy and delicious. It will be your go to all summer long for picnics and potlucks.

No Bake Rocky Road Pie

One of the reasons I love this no bake dessert is the fact that you’re using an ingredient hack that I keep coming back to: instant pudding. In this instance, it is chocolate instant pudding that makes the basis of this pie’s filling, which you’re topping onto a homemade graham cracker crust.

After filling it with mini marshmallows, chocolate chips and toasted almonds, you’re putting it in the freezer, thus turning this into a no-bake icebox dessert like so many others on this blog. When it’s done, it tastes just like that classic ice cream favorite without your having to churn anything.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1 tablespoon sugar
  • 6 tablespoons butter
  • 1 1/2 cups half and half cream
  • 1 envelope instant chocolate pudding mix 3.9 ounce
  • 1 container whipped topping 8 ounce
  • 1/2 cup miniature marshmallows
  • 1/2 cup chopped roasted almonds

Instructions

In a large bowl add the graham crumbs and sugar. Melt the butter and stir into the crumb mixture. Press the crust mixture into a 9 inch pie pan.

In a large bowl, whisk together the half and half and pudding mix for 2 minutes until well combined and slightly thickened. Fold in the whipped topping, chocolate chips, marshmallows and almonds. Pour the pie filling into the pie crust.

Place in the freezer for 6 hours until frozen. For garnish you can drizzle with melted chocolate chips and sprinkle with more marshmallows, almonds and chocolate chips. Slice and serve!

Notes

You can make this pie up to three months in advance and then keep it in the freezer. Doing so gives you a last-minute dessert option for any potlucks or picnics you get invited to in the future.

Don’t want to make the crust from scratch? No problem. A store-bought one will work just as well. Also, you can try a crust made from chocolate graham crackers, too.
