Instant Pot Shrimp Boil
People most often associate a shrimp boil with Mardi Gras food. However, when using your Instant Pot, you can enjoy a shrimp boil in your kitchen at any time of the year. Here’s how to recreate this iconic Southern dish at home for dinner or to serve at a backyard cookout.

The shrimp boil is a Mardi Gras tradition. Whereas it typically uses crawfish, you can make your own version at home as a shrimp boil. You’ll cook pounds of fresh shrimp in a spicy flavorful broth infused with a blend of Cajun seasonings using an Instant Pot electric pressure cooker. The cooker quickly steams the shrimp along with corn on the cob, sliced sausage and potatoes, all steeped in the same mouth-watering spices.

You can serve this delightful dinner or backyard cookout staple on wood cutting boards or layers of newspaper for a more authentic feel, much like you would when enjoying cooked Maryland crabs on a stack of newspaper. Since few people actually subscriber to paper newspapers anymore, you can recreate that old-fashioned liner by purchasing faux newspaper wax paper. These are grease-resistant sheets that are made for wrapping sandwiches. Some people call them deli wax paper. Or you can turn to rolls of parchment paper you might already have in your kitchen.

Wash and prep the shrimp, fingerling potatoes, corn and sausage. Slice the smoked sausage into your preferred thickness.
Pour the chicken broth or water into the Instant Pot. Add the potatoes first to ensure they cook evenly. Place the corn on top of the potatoes. Add the sliced sausage over the corn. Sprinkle most of the Old Bay seasoning, garlic powder, salt and black pepper over the ingredients, saving about 1/2 tbsp of Old Bay seasoning for the shrimp.
Close the lid and set the valve to sealing. Cook on High Pressure for 5 minutes. Once the timer finishes, perform a quick release by carefully turning the valve to venting or pressing the button on your lid to force the quick release.
Once the steam is all released and you can turn the lid to open, remove and and add the shrimp on top of the cooked ingredients. Sprinkle the reserved Old Bay seasoning over the shrimp. Close the lid again, set the valve to sealing and cook on High Pressure for 1 minute. Perform a quick release once the timer finishes.

Once everything is cooked, drizzle the juice of one lemon half over the shrimp boil for a fresh burst of flavor. Drain the liquid.
Melt the butter in the microwave, in 30 second bursts. Drizzle the melted butter over the shrimp boil. Garnish with extra Old Bay seasoning, parsley and lemon wedges.
Serve immediately with crusty bread or rice, and enjoy a flavorful one-pot shrimp boil!
