Chocolate Dipped Strawberries with Coconut Oil
I think chocolate dipped strawberries are the sweetest treat but I never realized the role that coconut oil plays in them. Also, before I made this recipe, I didn’t have coconut oil in my pantry. But then I learned that it is a common substitute for vegetable oil so it’s good to have around. But I digress: let’s get into this delicious recipe for dipping strawberries in chocolate.

This recipe, as written, is designed to be made for vegans. That is, it does not include any animal products and that includes the chocolate chips. I used Enjoy Life vegan chocolate chips that I found on Amazon. I’ve also seen this brand in the supermarket.
Amazingly, now you can buy dairy-free Ghirardelli chocolate chips, too. While pricey, they are my favorite brand on chocolate chips. And don’t freak if you see the ingredient cocoa butter on the ingredients’ list. Cocoa butter is vegan. It is a fat extracted from the cocoa bean. So using the word butter is a bit of a misnomer. But, again, I digress.
Anyway, you won’t believe how easy this recipe is to make. The longest part is waiting for the chocolate to harden on the strawberries after you’ve dipped them. Other than that, you’re looking at about five to 10 minutes of prep time.

Step-by-Step Instructions
Combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave for about two minutes or until melted. Whisk together until well combined.
Dip each strawberry in the melted chocolate, make sure to keep the green stems clean. Before the chocolate has a chance to harden, cover in sprinkles. You can do this by sprinkling them over the strawberries or you can put the sprinkles on parchment paper and then roll the strawberries in them.
Let the dipped and decorated strawberries rest on a wired tray. You’ll want to put parchment paper underneath to catch the dripping chocolate.

Once you have dipped and decorated all of the strawberries, put them in the fridge to let the chocolate harden. Keep them in the fridge for at least 30 minutes.
When the chocolate has hardened, it’s time to enjoy them.
If you’re giving them as a gift to someone for Valentine’s Day or another celebration, now would be a great time to box them up. However, return them to the refrigerator until it is time to give the present. You don’t want the strawberries to get to room temperature and start to sweat and melt.

Notes
Why do I recommend keeping the stems clean? You’ll want to be able to hold onto these during the dipping, later for decorating and also for eating.
As mentioned earlier, this recipe is written with vegans in mind, because I’m using Enjoy Life vegan chocolate chips. However, you can easily substitute other kinds of chocolate chips, including the regular kind made with dairy milk. Also, if you prefer dark chocolate, you can use a darker variety when making these chocolate covered strawberries. I used dark chocolate vegan chips in mind.

- 5 ounces chocolate chips
- 2 tablespoons coconut oil

Instructions
