Chocolate Covered Marshmallow Pops

I designed these chocolate covered marshmallow pops as a no-bake treat for Valentine’s Day. But you could easily customize them for another holiday, such as Christmas, or even to serve at a child’s birthday. Who wouldn’t love to give out these adorable pops as a party favor or even just serve them as dessert.

Making Chocolate Covered Marshmallow Pops

I feel like this treat is perfect for kids and those who are kids at heart. Anything marshmallow brings me back to my childhood or summer get togethers with my family around a campfire. Of course, I’m talking about making s’mores — which you can now do indoors with your air fryer.

Also, it makes me think about Passover candy and Jewish desserts. Of course, if you’re going to serve marshmallows, they have to be kosher.

Marshmallows aren’t typically kosher because they contain gelatin. So if you want to make these chocolate covered pops to be kosher, halal or even vegan, you’ll want to look for marshmallows that say that on the bag. I found a few kosher/halal marshmallow options on Amazon.

Back to this recipe: each pop requires three large marshmallows. I used regular, store-bought ones because I wasn’t trying to make this treat kosher or even vegan. But with a few substitutions, you can easily do that with this recipe.

Finally, you’ll want to create a non-stick work surface using parchment paper or wax paper. I have a marble slab non-stick surface that I use for projects like this and also as a background for taking pictures. You can find one like mine on Amazon.

Ingredients Overview

Step-by-Step Instructions

For each lollipop stick or straw, push 3 marshmallows onto it. If possible, leave a bit of space between each marshmallow. This will make it easier for dipping and decorating.

In a microwave-safe bowl, melt the chocolate chips in 20-second increments, stirring in between until smooth. Avoid overheating.

Hold each stick and dip all three marshmallows into the melted chocolate. Make sure you gently tap the stick on the edge of the bowl to remove excess chocolate.

Place the chocolate-dipped marshmallow pops on a parchment-lined baking sheet.

Melt the white and red candy melts separately in microwave-safe bowls. Using a spoon or piping bag, drizzle the red candy melts over the chocolate-covered marshmallows.

Repeat with the white candy melts.

Before the drizzled candy melts have hardened, add heart sprinkles.

Leave the pops on the parchment paper until the chocolate and candy melts are completely set. Once hardened, they’re ready to serve and enjoy!

This recipe shares many of the same ingredients as my white chocolate covered Oreo cookie recipe. That includes candy melts and heart-shaped sprinkles. You might want to plan to make both on the same day so you can use up all of the ingredients at once.

Speaking of heart sprinkles, I used the all red kind. However, you could easily buy a mix of pink, white and red heart candy sprinkles and use them as well.

Finally, when purchasing lollipop sticks, go with the ones that are six-inches long. This will ensure you have enough room for the three marshmallows and a spot to hold the stick, too.
