This is a traditional recipe for chicken fajitas. The only non-traditional part is that you’re cooking it in an air fryer, not a skillet.

It’s such a simple recipe with only six ingredients. Three of those six ingredients are bell peppers, onions and chicken breast. The rest is seasonings and oil.

You could easily substitute beef, shrimp or another protein for the sliced chicken breasts. Also, I know it is more economical to buy vegetables whole and slice them yourself. Same with the meat.

However, if you’re tight on time, supermarkets sell already-sliced peppers, onions and meat. You’ll find them in the frozen aisle. We’ve bought them in traditional grocers as well as Aldi and Trader Joe’s. You might even find these frozen ingredients in bulk at Costco, Sam’s Club or BJs Wholesale Club, too.

Additional Thoughts

As mentioned earlier, you can easily save time by buying pre cut vegetables and chicken. Also, you can get premade fajita seasoning at the store. And there’s no need to marinate the chicken before cooking. The air fryer will take care of all of that while cooking.

Some other ways to tweak this recipe in your favor:

  • Add other vegetables to the fajitas. You can customize them with your favorite vegetables like mushrooms, zucchini or cherry tomatoes.
  • If you don’t have avocado oil on hand, you can use another high smoke point oil instead.
  • Substitute chicken thighs or another kind of protein.
  • Substitute plain Greek yogurt for sour cream. This will up the protein nutritional value of your meal.
  • Make ahead. While fajitas are best enjoyed when they are made fresh, you can prepare the seasoned chicken and vegetables ahead of time and store them in the refrigerator until ready to cook in the air fryer. If you have leftovers, you can reheat them in the air fryer the next day.
  • If you have a second air fryer, you can us it to warm the tortillas you’ll be using for your fajitas. That is, set the air fryer to 350°F, put the tortillas in the basket in a single layer and heat for just 30 seconds.
